These little treats are the perfect balance between the soft texture of the madeleine and the refreshing, tangy flavour of the grapefruit. As quick to prepare as they are delicious, they are perfect for a brunch or a snack with friends.

Ingredients
50g. butter
100g. sugar
1 pinch salt
2 eggs
the zest of a grapefruit
juice of a grapefruit
150g. Flour
1 tsp baking powder
For the glaze:
50g. powdered sugar
1 tbsp grapefruit juice
For decoration:
A few pieces of grapefruit
Preparation
Preheat oven to 428 degrees. Cream the butter in a bowl. Add the sugar, zest and a pinch of salt. Add the eggs and blend until the mixture whitens. Add the grapefruit juice and mix. Sift in the flour and baking powder and mix well. Butter your madeleine mould, add the mixture and bake for 12 minutes. Remove from the oven and unmould quickly, placing the madeleines on a wire rack. Leave to cool. Mix the powdered sugar with a tablespoon of grapefruit juice and glaze the madeleines. Decorate with grapefruit pieces.
