Ingredients

5dl full-fat cream

1 sprig rosemary

1 small bunch thyme

1 small bunch sage

1 pinch of fleur de sel

1. Pour the cream into a large bowl, then use an electric mixer to whip it. Continue until the texture changes: the cream will thicken, form small lumps, and a milky liquid (buttermilk) will begin to separate. That's when you know you're on the right track!

2. Pour the contents of the bowl through a fine sieve to separate the solid butter from the buttermilk. Press lightly with the back of a spoon to remove as much liquid as possible. The butter will quickly gather into a compact ball, which you can then transfer to a bowl that you have cooled beforehand. This helps keep the butter firm and easy to work with.

3. Pour 1.5 dl of ice-cold water into the bowl containing the butter. This step is important to prevent the butter from melting during the working process. The ice water will help maintain the firm texture and allow you to rinse the butter thoroughly to remove any remaining buttermilk, making it more stable and flavorful. Mix gently to incorporate the water.

4. Using a spatula, knead the butter to extract any remaining liquid. Strain the butter again. You can keep the buttermilk to use it in your other recipes. Chop the aromatic herbs, add them to the butter with the fleur de sel and blend briefly with an electric mixer.

5. Once your butter is rinsed and ready, shape it into the form of your choice. You can roll it into a sausage, make a ball or even use a small mold for a more elegant result.
