In this article, discover how to make your own herb butter. It's a very simple recipe, which will also allow you to personalize your butter according to your desires. I'm using aromatic herbs and a touch of fleur de sel here, but the versions are unlimited. You can also give it any shape you like, and that's really nice!
Ingredients
5dl full-fat cream
1 sprig rosemary
1 small bunch thyme
1 small bunch sage
1 pinch of fleur de sel

1. Using a hand mixer, whip the cream until it forms small lumps and a milky liquid (buttermilk) appears.
2. Strain the butter through a sieve. It will quickly take the shape of a ball, which you can place in a chilled bowl.
3. Add 1.5 dl of ice water to the bowl to prevent the butter from melting in the next step.
4. Using a spatula, knead the butter to extract any remaining liquid. Strain the butter again. You can keep the buttermilk to use it in your other recipes. Chop the aromatic herbs, add them to the butter with the fleur de sel and blend briefly with an electric mixer.
5. Shape the herb butter into the desired form, then decorate with a few herbs or edible flowers.
6. Wrap the herb butter in cling film and refrigerate for at least 1 hour before use. It will keep for 7 to 10 days in the refrigerator.
