As the days grow shorter and the nights cooler, nature presents us with an enchanting and colorful landscape of red and gold. Dead leaves crunch beneath our feet. Autumn is here! And with it, a cozy atmosphere that invites you to snuggle under the blanket with a cup of hot tea and a homemade pie. Here are two tasty recipes that will transport you to the heart of a gourmet, comforting autumn.
Autumn plum tart
The ideal combination of sweetness and acidity
For the dough:
200g. flour of your choice
60g. sugar
1 large pinch of salt
120g. butter
1 egg
For the garnish:
4 or 5 plums
2 tbsp of honey
a little powdered sugar
Preheat oven to 220 degrees. Mix the flour, sugar and salt in a bowl. Cut the butter into small pieces, add to the mixture and rub between your hands until crumbly. Stir in the egg and bring together into a soft dough, without kneading. Flatten the dough into the desired shape, cover and chill for 30 minutes. Meanwhile, cut the plums into thin wedges.
Line the tin with the pastry and trim off any excess. Prick the bottom with a fork and brush with honey. Add the plums. Form a braid with the remaining pastry and decorate the tart. Bake for 30 minutes. Remove from the oven, wait for the tart to cool slightly before unmolding, then dust with powdered sugar.
Autumn apple pie
Simple, authentic and delicious
For the dough:
400g. flour of your choice
120g. sugar
1 large pinch of salt
1 cup of butter
2 eggs
For the garnish:
3 or 4 apples
2 dl. cream
3 tbsp of of sugar
1 egg
1/2 tsp cinnamon
a little powdered sugar
Preheat oven to 220 degrees. Mix the flour, sugar and salt in a bowl. Cut the butter into small pieces, add to the mixture and rub between your hands until crumbly. Stir in the eggs and bring together into a soft dough, without kneading. Flatten the dough into the desired shape, cover and chill for 30 minutes. Meanwhile, cut apples into thin wedges. In a bowl, combine the cream, sugar and cinnamon. Add the egg and mix well.
Line the tin with the pastry and trim off any excess. Prick the base with a fork, add the apples and pour in the cream mixture. Cut 1 to 2 cm-wide strips from the remaining pastry and cover the tart. Place in the oven for 30 minutes. Remove from the oven, wait for the tart to cool slightly before unmolding, then sprinkle with powdered sugar.
