Homemade coconut milk and lime ice cream, without an ice cream maker

Ingredients
For about 10 scoops:
150 ml water
100g sugar (or less)
200 ml coconut milk
The juice of 4 limes
The zest of 1 to 2 limes
Preparation
1. Prepare the syrup:
Pour the water and sugar into a small saucepan. Heat over low heat, stirring, just long enough for the sugar to melt completely (no need to boil).
2. Add the coconut milk:
Remove the pan from the heat, then pour in the coconut milk. Mix well to obtain a smooth and homogeneous base.
3. Add a touch of tartness:
Add the freshly squeezed lime juice and finely grated zest. Mix again to distribute the flavors evenly.
4. Ready for the freezer:
Pour the mixture into a freezer-safe dish (glass or plastic) with an airtight lid. If your lid does not seal perfectly, place cling film on top of the mixture before closing.
5. Wait... a little:
Place the dish in the freezer overnight, allowing the ice cream to set properly.

The next day, take out your coconut lime sorbet, serve it chilled, and enjoy this little taste of summer at home!
